How it All Began
It all started when I was working for a local brewing company in the touristy town of West Reading. The chef, who was quite creative, started serving pickled items where beer was incorporated into the brine. Well, being in the restaurant industry for most of my life, having a very extensive background in bar culture and an absolute love for beef jerky…the idea came to me. Why not take beer and infuse it into my jerky marinade.
I approached the owners of the brewery with the idea, and was given a green light. I quickly put together some recipes, each being a different flavor and matching a beer style with the style of jerky marinade. The end result was a savory, bold and a well seasoned jerky with a beer essence on the back pallet, giving you the best of both worlds. The owners were pleased and the wheels started turning. I quickly cleaned and sterilized some olive jars, slapped some stickers and labeling on the outside, tossed in a silicone moisture packet and boom…I was off and selling beer infused beef jerky.
It wasn't too long before the word spread and people were engorging on the jerky. One day, a gentleman from Texas stopped in the brewery to enjoy the local craft beer and noticed the 8 flavors of jerky I had at that time. He tried them all and was astounded by the flavors, the fine balance of ingredients and of course, the infusion of beer into the jerky. He asked me, “Where was this jerky made?”, to which I replied, “Right here?”. He then asks, “By who?”, and I said, “You're looking at him”. “How long have you been making jerky?”, and I responded, “This is my first time making jerky”. He took a moment and then leaned into my direction and said, “Texas is the birth place of jerky. There are people that would kill for recipes like this. You MUST do something with this!”. That was the moment I knew that I must take this further.
What a great idea, selling beer flights and pairing them with the jerky flights that match the beer style. The jerky couldn't be made fast enough. It was selling so fast I literally had no time off from work to enjoy with my family and decided to better my life and start my own craft jerky business. And here we are today!
